My actual birthday was the 16th. I worked, went out to dinner at the Raven's Restaurant in Mendocino, came home, and released my book! Pretty exciting! Today, my daughter came home from her Dad's house and I saved making cupcakes for her arrival. And I'm happy to say, my cupcakes exceeded my expectations. They were so delicious and so beautiful!
First, I made the batter. The basic cupcake recipe is in my cookbook! For this version, I used flour, cocoa powder, light brown sugar, baking powder, baking soda, & salt in my dry. And in my wet, I used soy milk with a splash of apple cider vinegar, melted vegan butter and applesauce.
My original plan was to make my own frosting with Miyoko vegan butter and powdered sugar, but I found this organic, vegan frosting at the store I wanted to try it. I had natural food coloring that I used to make the frosting blue!
I frosted my cooled cupcake and topped it with toasted coconut, and made my birthday wish.
