My friend Heather was stopping by for a short visit and so I decided to make cupcakes. What I didn't know, was that she was bringing her son, and her son's vegan friend! I made apple cupcakes with chocolate cinnamon yam frosting. Here are the ingredients I used.
Flour, baking soda, baking powder, salt, suger, Earthbalance, apple sauce, soy milk, apple cider vinegar, pre-cooked baked yams, & cocoa powder.
I butter the heart tray so my cakes don't stick. And I melt a couple tablespoons in pan and set aside.
I love this vegan baking hack: I pour about 3/4 a cup of soy milk and add a splash of apple cider vinegar, and stir. It creates a buttermilk effect, and helps make your cakes rise.
I have to admit, I don't measure exactly! I use about 3/4 to 1 cup of flour, about 1/2 cup of sugar, 1 tsp baking powder, 1 tsp baking soda, 1/2 tsp salt
I mix my dry mix with my soy mixture, 2 tbs of apple sauce and my melted earthbalance. I pour it in my hearts and bake them at 350 for about 15 minutes. I find the timing and temperature to be different for different ovens.
I blend my pre-baked yams with cocoa powder, sugar, cinnamon and a slash of soymilk.
