I had $20 worth of groceries and 1 hour to make a meal for my new friend Sam. I planned the menu on the way to the market and adjusted it depending on what they did and didn't have.
First, I made myself a snack of bread cubes with a bowl of olive oil, salt and rosemary.
Then I chopped some mushrooms and put them in a pan with olive oil and salt. I sauteed on medium heat until browned.
While the mushrooms are cooking, I grate 2 small potatoes. I make sure my hands are clean, and then a grab handfuls and squeeze some (but not all) of the extra water out of them over the sink. Then I put it in a bowl and mix it with olive oil rosemary and salt, and spoon it into my heart tray, and bake at 350 until browned (20~30 minutes).
While the potatoes are baking, you can build you pizza. Bake at 350 for 15~20 minutes. That's daiya brand vegan mozzerella style cheese. It was my first time using it. Next time, I will use less (it's a little sticky to have a lot) and I also would include fresh basil (they were out at the market).
