My guest this month was Eli Bye. Eli is an old friend that haven't seen in years. Since last seeing each other, we both went vegan, and he's now my one local vegan friend!
I like to get out all my ingredients and tools to start. I never measure when making pesto. I used all the basil, half the fresh squeezed lemon, a good pour of olive oil, a 1/2 tsp salt and about 1/4 cup of pine nuts.
I blend it with my Smart Stick.
