This meal was made of three recipes from my book, including one of my favorites, mushroom gravy. Mmmmmm.
Recipe 1: Simple Broth
Boil a pot of water with chopped celery, carrot, leek and salt ~ and let simmer for about an hour. Strain. There's your simple broth.
Recipe 2: Mushroom Gravy
Chop and sautee leek and mushroom in oil and salt. I start with the leeks and let them cook a bit before adding the mushroom ~ so the leeks are well cooked. When both are cooked well, add some broth. Stir in a little flour to thicken it up. There's your mushroom gravy.
Recipe 3: Roasted Asparagus
Chop of the hard ends of the asparagus. Oil and salt them. Roast them until browned.
If your gravy cools off, you can add a little more broth, and reheat for serving. When your asparagus is done, serve beautifuly.
